Bread is a staple food prepared from a dough of flour and water, usually by baking. It is a prominent food in Nigeria, thus knowing how to make one will be economically beneficial to you.
Homemade Bread can come in different varieties like sardine bread, coconut bread, banana bread or butter bread. In this post i will be showing you how to make bread for yourself and you will be able to produce something that is unique and very different from the regular ones or mass-produced ones in the market.
You will be learning the basics of Bread making and then hone your skill to make specialty breads.
Step by step process of production

Equipment needed
- Pan – 2
- Knife – 1 piece.
- Oven or stove with a deep pot( to use stove or gas cooker, put sand in a deep pot and place the pan on the sand in the pot to bake).
- Flat board – 1 piece.
- Rolling pin – 1 piece.
- Bowl – 2 pieces.
- Napkins.
If you follow this list of Nigerian bread ingredients, you will have enough dough to bake two loaves of bread at home.
This is now the all-important information you will find very useful as you set to produce bread. You will need to follow these steps I am going to share with you to the letter in order to have a good result. The steps are:
- First, you’ll need to proof the yeast. Do this by adding a quarter of the lukewarm water into a bowl, add half of the sugar and the entire yeast. Do ensure you use lukewarm water cos hot water will kill the yeast and cold water won’t activate the yeast. It has to be lukewarm; not hot, not cold, just in between. Whisk till smooth and set aside to rise for 5-10 minutes.
- Mix the flour with salt and the remaining sugar and set aside, also mix the rest of the lukewarm water with the vegetable oil and set aside.
- Check on the yeast, when it’s risen, add the water and oil mixture into the yeast mixture.
- Now add the flour and sugar mixture into the mixture intermittently, work with your hand or you can use a mixer.
- Work the batter until you get a stretchy and sticky dough. Don’t worry if it’s too stretchy, this only means you’ve done good and will end up with really soft bread.
- Now sprinkle some flour onto a clean surface, transfer the dough onto the surface and begin to work your dough. Fold in more flour into the dough until you get a smooth, non sticky but still stretchy dough, add more flour if necessary. Be careful not to over work your dough. This should take 8 minutes thereabouts.
- Now, grease a big bowl with oil, make sure all areas are covered. It is important to grease the bowl to prevent the dough from sticking to the bowl when it rises. Transfer the dough into the bowl. Cover with a thick towel and place in a dark place like your oven or microwave and leave the dough to rise for 1- 1.5 hours. Your oven is your best bet. If you’re in Nigeria or any hot climate region, this should take 45 minutes to an hour.
- Do make sure the dough doubles in size, this is very necessary.
- Check on the dough, it should be double its previous size by now.
- Punch the dough in the middle to let out trapped air.
- Gently remove the dough from the bowl and transfer unto a clean surface. Knead your dough again for 2 minutes, do not over work.
- Oil a bread pan with butter, then transfer the dough into the oiled bread pan. Cover again with the thick towel and put it back in the dark place to rise a second time. This time for 45 minutes.
- 20 minutes before the 45 minutes is up, preheat your oven or pot to 220 degrees Celsius/ 200 for fan assisted.
- Take the dough out of the dark place after its risen, it should be double its size again by now. Place in the preheated oven and bake for 30 minutes or until it browns on the top.
- Take it out of the oven after its done.
- Transfer the bread onto a rack immediately and rub some butter on the top while it’s still hot, the butter will penetrate into the bread bread, making it more moist and yummy. Or if you are making specialty bread like coconut or banana bread e.t.c, you can create a glaze by mixing butter, coconut flavor or any other flavor and sugar and rub on the bread.
- Leave to cool for a bit and enjoy.
Note: You can make other varieties of Bread like coconut, banana, sardine, cake by just adding the flavors and flakes of what you want to make to this recipe.
